Dijon Cabbage Steak and Chicken
So simple… Cabbage steaks might be my new obsession.

1 medium head cabbage
36 oz chicken breast (3 breasts, fillet)
1 tbsp poultry seasoning (or your favorite seasoning for chicken. I used Salt, pepper, garlic, & paprika)
Dijon Sauce
¼ cup extra virgin olive oil
2 tbsp red wine vinegar
3 tsp coarse grain mustard
3 tsp Dijon mustard
¾ tbsp honey
1 tbsp tap water
3 tsp minced garlic
Salt & Pepper to taste

Preheat oven to 400°F.
Slice cabbage into thick “steaks” or wedges and arrange on a lined baking sheet.
Brush cabbage steaks with half of the extra virgin olive oil and roast in the oven for about 25 minutes. Or until browned and easy to stab with a fork.
Meanwhile, fillet chicken breast if it is not already fillet. Season with your favorite seasoning. Place on a lined baking sheet and place in in the oven with the cabbage for about 12 minutes.
While those are cooking, make the dijon sauce.
in a small bowl, mix the remaining olive oil, red wine vinegar, both mustards, honey, water, garlic, salt, and pepper.
Serve chicken with roasted cabbage steaks and drizzle with any remaining mustard mixture.
(optional) You can serve this with a side of brown rice for more carbs.
